Zucchini Snickerdoodles

3/4 cup butter-flavored shortening; 1 1/2 cups sugar; 1 egg; 1 tspn vanilla; 3 1/2 cups flour, 2 tspn baking powder, 1 tspn cinnamon; 1/2 tspn salt; 1 1/2 cups shredded zucchini;. Directions: Mix shortening and sugar together. Add the egg, vanilla, baking powder, cinnamon, and salt. Add shredded zucchini. Gradually add flour. Mix well. Spoon onto greased cookie sheet. Bake at 350F for 12 to 15 minutes. When the cookies come out of the oven, flatten them with a fork. Yields 6 dozen. Optional: coat spooned dough in a cinnamon sugar mixture (4 Tbspns sugar, 1 tspn cinnamon.)
