Zucchini Cakes


6 med zukes, yellow or green

1 c. toasted breadcrumbs

1 c. shredded parmesan or any cheese you choose

1/2 c. minced onion'

1 egg beaten

1 1/2  tsp.Italian seasonings (basil, oregano, thyme)

1/2 tsp. salt

1/4 tsp. pepper


Grate zucchini. Press between paper towels to remove excess water. Combine with next 7 ingredients.  Shape into 2" patties, press firmly together.  In large skillet, cook patties in either olive oil or butter until lightly brown, turning frequently and pressing down with spatula.
