White Bean and Scapes Dip

1/3 C. sliced garlic scapes
1 T. freshly squeezed lemon juice
½ t. course sea salt
1 can cannellini beans, rinsed and drained
¼ C. extra virgin olive oil

 

  • In a food processor, process garlic scapes, lemon juice, salt and pepper until finely chopped.
  • Add beans and process until pureed.
  • With motor running, drizzle in olive oil and process until smooth. Add 2 – 3 T. water, as needed, until desired consistency.
  • Add more salt, pepper and lemon juice, to taste.
  • To serve, spread onto a plate or wide bowl. Drizzle with more olive oil and salt, if desired. Serve with veggies, crackers or pita chips.
