Vegetable Fritters

Ingredients:

1 cup Grated potato
1 cup Grated vegetables (carrots, turnips, parsnip, peppers, zucchini, greens ect.)
1/4 cup Diced onion
1/4 cup All purpose flour
1 egg
1/2 tsp salt
1/2 tsp baking powder
pepper, seasoning
3 Tbsp oil

Method:

Combine all ingredients except oil into batter. Heat oil in a medium skillet. Spoon batter into hot oil into pancake sized rounds. Cook 3 minutes each size. Serve with sour cream.
