Tomato Zucchini Frittata

1 tsp olive oil                        1 zucchini, sliced                  1/2 cup chopped onions/scallions

2 cloves garlic, chopped     1 can (14.5oz) Red Gold diced tomatoes, drained, or use fresh diced tomatoes

1/4 tsp black pepper            2 eggs & 4 egg whites         1 cup Mozzarella cheese,shredded

 

Preheat oven to 350°F.  In an oven-safe skillet saute’ zucchini, green onions and garlic in oil.  Cook for 5 minutes or until tender.

Add diced tomatoes and black pepper.  Cover and heat until zucchini is tender.

In a small bowl, beat together eggs and egg whites,  Pour over vegetable mixture and sprinkle with cheese.

Bake until eggs are set and a knife inserted in the center comes out clea, 10-15 min.  Cut into wedges to serve.  Makes 6 servings.        Prep time: 10 min.  Cook time: 20 min.
