Sweet Soybean Salad

 

½ cup chopped onion

½ cup celery

½ cup green sweet pepper

1 pint package edamame

 

Dressing:

½ cup corn or safflower oil

½ cup Basil’s Harvest herbal vinegar

1/3 cup organic sugar

 

Fill a 3-4 quart pan half full of water and bring to a boil. Add whole soybean, pod and all into boiling water and boil five minutes. Remove, cool and pop soybeans out of pods. Mix soybeans with other vegetables and toss with dressing. Serve cold.
