Sweet Potato, Bacon, Jalapeno Bread Pudding

3 sweet potatoes, baked and cooled

2 jalapeno peppers, seeded

5 pieces of bacon, cooked

5 eggs

3 cups milk

1/4 cup Steens syrup

1 loaf of day old french bread

 pinch of salt



  1. Remove skin from sweet potatoes. Place in a bowl with eggs. Mash with a potato masher. Add milk and salt.
  2. Chop jalapeno and bacon. Add to mixture.
  3. Dice bread. Add half to the mixture. Add more bread until mixture is spongy but not loose. You may not use the whole loaf.
  4. Place bread pudding in a casserole dish with a lid or place a layer of saran wrap and a layer of foil on top of dish.
  5. Bake in a 300 degree oven for 30 minutes. Remove lid or covering. Turn oven to 350 and finish for 10-15 minutes till brown and bubbly.
