Sweet and Sour Peppers

1/4 cup catsup

3 Tablespoons vegetable oil

 1/4 cup soy sauce

 2 cloves garlic, minced or pressed

 1/3 cup cider vinegar

2 cups very thinly sliced onions

 1/4 cup packed brown sugar

 2 large red bell peppers, cut into thin strips

 3/4 cup water

 2 large green bell peppers, cut into thin strips

 1 tablespoon cornstarch

 1 can (15 oz) baby corn, drained

 1 1/2 cups raw or toasted cashews, whole or half pieces


Combine sauce ingredients in bowl. Ready remaining ingredients. Heat oil in wok or large skillet. Add garlic &onions; stir-fry 3-4 minutes. Add peppers; continue to stir-fry. Add 2-3 tablespoons water as needed to prevent scorching. When peppers & onions begin to soften, add corn & cashews. Stir-fry 1 minute, then add sauce and simmer another minute. Serve immediately. Serves 4
