Summer Squash Skillet

4 cups summer squash, sliced
½ cup onion, sliced
1 cup fresh veggies—green peppers,
     carrots, etc. (chopped or sliced)
1 tablespoon olive oil
Salt and pepper to taste (or use soy
     sauce if desired)
Fresh herbs (optional)
Shredded cheese (optional)

   Sauté squash, onion, and other vegetables in large skillet until tender. Sprinkle with fresh herbs and shredded cheese just before serving, if desired. Serves 4.
