Strawberry Ginger Jam

(from Caroline Peani)

- 4 quarts of strawberries (wash and hull then mash them up in the pot)
- 4 Tbs chopped candied ginger
- 2 Tbs lemon juice

Once boiling add:
- 1 cup of honey
- 1.5 cups of sugar

Slowly stir in:
- 1 box (1.75oz) low sugar fruit pectin

Simmer for a while (45min to an hour) until mixture thickens.

Makes ~7 8oz. jars. (I usually can this in a boiling water bath, but I expect it would do well in the freezer too.)
