Stewed Rhubarb

Stewed Rhubarb

Combine 4 cups sliced rhubarb with approx. ½ cup sweetener (if sugar; adjust amount if honey, maple syrup or stevia, etc), and ½ cup liquid (water, orange juice or apple juice).  Simmer over medium heat until rhubarb is tender and “saucy”.  Stir frequently to avoid scorching.  Can be cooked in combination with apples or strawberries to help tame the tartness.  Adding strawberries will make a thinner sauce.

Eat sauce as a dessert or over pancakes or waffles.  Delicious mixed with yogurt.
