Spinach Sauté with Corn

Tear 1 lb spinach into bite size pieces.

Add in thirds to pan with garlic or garlic scapes and olive oil.

Sauté until bright green, add 1c frozen or fresh and cooked corn, cover for a few minutes once all spinach has been added.  Mushrooms are also a great addition to this dish.
