Spinach, Radish, and Lemon Balm Salad tossed with  a lemon-olive oil vinaigrette and topped with Goat Cheese and Almonds

1 bunch of Radishes, washed, trimmed, and cut into thin slices

5 oz of Spinach leaves, washed and dried

2-3 Tablespoons of chopped lemon balm or zest from 1 lemon

1/4-1/2 tsp of salt (Redmond Real Salt)

1-2 T of freshly squezzed lemon juice

2-3 T of olive oil

1/3 cup of minced sweet yellow onion

4 oz of goat cheese

1/2 cup of almonds, kept whole or chopped in half

Directions

Mix all ingredients together, but save cheese and nuts to be sprinkled over the top.  Always taste to see whether you prefer more or less olive oil, lemon juice, or salt.
