Spinach-Cheese Quiche

1 unbaked 9-inch pie crust

 1 T. butter

 2 large scallions, sliced

 5 c. finely chopped spinach

 2 t. Dijon mustard

 1 c. shredded cheese-mixture of Gouda, cheddar and whatever else makes you happy!

 3 eggs

 1 c. yogurt

 1/2 c. milk

 1/2 t. salt



Prick surface of crust with a fork and bake at 400 for 10 minutes. Melt butter in a skillet and saute scallions and spinach until soft and dry. Spread mustard over bottom of crust and cover with spinach mixture then cheese. In a separate bowl beat eggs lightly then add yogurt, milk and salt to eggs. Pour egg mixture over cheese in crust. Sprinkle surface with paprika. Bake at 350 for 45 minutes.
