Southwestern Slaw

A southwestern variation on the traditional slaw. Great for a side dish or in wraps with black bean spread, cold chicken or salmon (Wild Alaskan). Serves 4.

1/2 cabbage, shredded (Napa or green)

2-3 scallions, minced

3 radishes, julienned

1 bunch cilantro, chopped

OPTIONAL: halved cherry tomatoes, 1/2 c. sweet corn (thawed frozen corn OK)

Dressing:

1/2 c. sour cream

1/2 c. prepared salsa

1 T. lime juice

1/2 tsp. salt


Place vegetables in medium-sized bowl. Mix dressing ingredients in a small bowl. Pour dressing over vegetables. Mix well. Can be served right away or chilled and served later.
