Snow Pea and Radish Salad with Ginger-Lime Vinaigrette

Salad:

8 Radishes Sliced Thinly
1/2 Cup Scallions chopped
1 TBSP Salt
1 Pound Cooked* Trimmed Snow Peas
*Bring pot of salted water to a boil and cooked trimmed snow peas until bright green (2-3 minutes); drain. Fill a different bowl with ice water and plunge drained peas into ice water Drain.

Mix Snowpeas into bowl with Radishes, scallions and salt.


Vinaigrette:

Whisk together in separate bowl
1 TBSP Fresh squeezed Lime Juice
1 TBSP Vegetable Oil
1 TBSP minced Fresh Ginger
1/4 teaspoon salt
1/2 teaspoon black pepper
2 TBSP Fresh Cilantro

Pour vinaigrette over salad mixture and toss to coat vegetables evenly.
