Slow Cooker Roast Chicken

Provided by Brooks Parker (a Village Acres CSA Member).  My wife Beth said it was the best think I have ever cooked, and she was serious.   

• 1 (5-1/2-pound) roasting chicken - preferably a pasture raised chicken from Village Acres Farm
•1 tablespoon kosher salt
•1 tablespoon sweet paprika
•1 tablespoon oregano
•1 teaspoon curry powder
•1 teaspoon onion powder
•1/4 teaspoon white pepper
•2 cups large-dice onion
•2 cups large-dice carrot
•2 cups large-dice potato
•1 tablespoon oil

Mix salt, paprika, oregano, curry, onion powder and white pepper in a small bowl.

Put the diced vegetables on the bottom of the crockpot. Rub the spice blend all over the chicken skin and inside the cavity. Place chicken breast-side up in crockpot, and drizzle with the oil. Cover pot, and set on high. Cook for 3-1/2 to 4 hours, or until thoroughly cooked. Strain out vegetables, and place on serving platter with the chicken and carve at the table. Serve drippings on the side.
