Scandinavian Cucumber Salad

  • Total Time: 1 hour, 10 minutes
  • Servings: 6 –8



  • 8 cups of thinly sliced cucumbers
  • 1 teaspoon salt
  • ½ cup white vinegar
  • 1 tablespoon sugar
  • 2 teaspoons of honey
  • 2 tablespoons of virgin olive oil or canola oil
  • ¼ of minced fresh dill, fennel, parsley, or chives
  • ½ cup of thinly sliced sweet or red onion



1. Place the cucumbers in a colander and sprinkle with half the salt.

2. Cover with ice and sprinkle the other half of salt over the ice.

3. Weight down with a plate and set in the sink to drain at least 1 hour.

4. Transfer cucumbers to a large bowl. Do not rinse the cucumbers.

5. Mix the vinegar, sugar, honey, and oil. Pour over the cucumbers.

6. Toss in the sliced onions and herbs.

7. Serve chilled.

8. Store in the refrigerator in a closed non-metallic container.
