We’ve been exploring various vegetable pancakes. Here’s one from Mark Bitman (NY Times)

Arepas With Cheese and Green Pepper

1 Cup yellow cornmeal, finely ground
½ tsp salt
½ c grated Cheddar or Monterey Jack
1 C milk
2 T bsp butter
½ C fresh sweet corn kernels  (I used chopped pepper)
¼ c chopped scallion
1/4 C chopped cilantro or parsley
1 small hot pepper, minced
3 Tbsp oil for cooking
