Sausage, white bean & kale soup
1lb of bulk sausage (I use half hot, half sweet Italian) if using links cut into small pieces
2 onions, chopped
3-4 cloves garlic, minced
2 cans (14oz) diced tomatoes (I use fire roasted and a can of zesty jalapeño tomatoes)
1lb chopped kale
32oz box chicken broth
2 cans (14oz) cannellini beans, drained and rinsed
***if you have it, throw a 1" chunk of parmigiana cheese in. Adds great flavor!
About 2 tsp salt or to taste.
If you don't use hot sausage and spicy tomatoes, add 1/2 tsp fresh ground pepper
Directions: over medium heat, add a small amount of oil (about a tablespoon) in the bottom of a soup pot, add sausage and cook till no longer pink and crumbled. Add onion and garlic, cook till translucent. Add tomatoes and kale. Continue cooking till kale is wilted. Add remainder of ingredients and simmer for 30 minutes. Adjust seasoning to taste.
If you use the hot Italian sausage and a can of the zesty tomatoes it gives the soup a nice spicy flavor! Serve with additional grated cheese!
