Sassy Corn & Cucumber Relish

1 cup fresh corn kernels, steamed

1 cucumber, seeded and diced

2 green onions, finely chopped

2 tsp sugar or honey

1/2 tsp salt

3-4 tsp finely chopped cilantro

1 Tbls red wine vinegar or balsamic vin.

1 Tbls sesame oil

1 tsp dried red chili flakes

1 small hot pepper, seeded & minced

Mix all ingredients.  Refrigerate for several hours to allow flavors to blend.

Serves 8-10 as a condiment.

Nutrition information per serving, 8 per recipe:  Calories-62, Protein–1 g, Total fat-1.8g (sat. fat < 1g), Carbohydrates-10g, Cholesterol-0 mg, Sodium-141 mg.
