“Saabut Aloo” Whole potatoes

 

serves:4-6   cooking time ~30min

8 medium potatoes washed and cubed

½ C olive oil

pinch of tumeric

2 bay leaves

1 small onion, grated

2 tbs ginger, grated

2green chili pepers, chopped

2 large cloves garlic, chopped

½ C yogurt

1tsp garam masala

salt to taste

In ¼ C oil sauté potatoes till golden, put in a bowl. Add ¼ C oil to pan and stir-fry turmeric and bay leaves.

Add onion, ginger, garlic, chili, and stir till mix stops sticking to pan.

Stir in yogurt and salt. Cook on moderate heat for 2 min.

Add potatoes and cook 10-15 min. Lower heat after first 5min add water if needed.

2 min before done add garam masala and mix well.
