Roasted Pear, Radish, and Mesclun Mix Salad with blue Veined Cheese and Walnuts

(serves 2-4)

2 pears, peeled if desired, cut in half and cored

Bunch of Radishes. Sliced in ¼'s

3-5 oz of mesclun lettuce mix

1-2 T of olive oil

1-2 garlic cloves, minced

2-4 oz of blue veined cheese

½ cup of walnuts

Vinaigrette...2-4 T of olive oil, 2-3 T of balsamic vinegar, 1 T of honey, S & P to taste

Preheat oven to 400 degrees. Put pear halves, radishes, and minced garlic in baking dish and toss with olive oil and a pinch of salt and pepper. Roast for 8-10 minutes. While in the oven, mix the vinaigrette and mesclun mix together. Top with roasted fruit and veggie mixture and then crumbled cheese and walnuts and serve.
