Roasted Green Tomato Salsa

8 - 10 ounces green tomatoes

1 small - medium red onion

2 jalapeno peppers

2 cloves garlic

2t. lime juice

1/4 c. chopped cilantro (optional)

1/4 t. salt

Heat an iron skillet to sear the vegetables, or use a grill. Cut green tomatoes and onion into very thick slices.  Seed and coarsely chop jalapeno peppers.  Place tomatoes, onion, jalapeno and garlic in the skillet and sear until blacked and almost cooked.  Move ingredients to food processor, fitted with the knife, as they are ready.  Add any optional ingredients to food processor and coarsely chop.  Cool in refrigerator.  Enjoy.
