Rice Salad

1 cup Cajun Grain, cooked then cooled

2 tomatoes, diced

1 bell pepper, roasted and diced

2 ears corn, cut off cob

1 golden squash, diced

½ cup lima beans, cooked

½ cup mayo

¼ cup milk

½ cup parmesan

Salt and Pepper, to taste


  1. Saute corn and squash together. Add to tomatoes, limas and pepper.
  2. Mix together mayo, milk, cheese and seasonings.
  3. Add vegetables and mayo mixture to cooked rice.
  4. Adjust salt and pepper to you taste.
