Rhubarb Torte

CRUST

½ cup butter

1 cup flour

5 tablespoons powdered sugar

 

Press in bottom of 9 x 13 pan. Bake at 350° for 15-20 minutes.

 

TOPPING

2 eggs

1½ cups sugar

2 tablespoons flour

½ teaspoon salt

½ teaspoon baking powder

1 teaspoon vanilla

3 cups diced rhubarb

 

Mix together eggs and sugar. Add flour, salt, baking powder and vanilla. Put rhubarb pieces on top of crust and pour egg mixture over. Bake for 45 minutes more. Serve in squares. Top with whipped cream, if desired.
