Rhubarb Bread

1 1/2 c light brown sugar

2/3 c vegetable oil

1 egg

1c sour milk or buttermilk

2 tsp vanilla

2 1/2 c flour

1 tsp baking soda

1 tsp salt

1 1/2 c chopped rhubarn

1/2 c walnuts

1 T melted butter

1/4 c sugar 

 

1.  Mix the first 8 ingredients together (brown sugar through salt) and add rhubarb and walnuts.

2.  Stir well and pour into a greesed and floured loaf pan.  (Two pans can be used for smaller loaves.)

3.  Mix melted butter and sugar then sprinkle over the dough.

 Variations (use your imagination):

  • organic brown sugar
  • frozen blueberries
  • flax seed mela
  • wheat germ
  • 1 part whole wheat flour
