Cousin Lucy’s Famous Zucchini Bread



Bowl #1:
3 eggs
2 c. sugar
1 c. vegetable oil
1 tsp. vanilla extract
8 oz. cream cheese, softened

Heat oven to 350 degrees. Grease and flour( 2) 9" X 5" loaf pans or(  6)  5" X 2" foil loaf pans.  In a large bowl beat eggs, sugar,
veg. oil and vanilla until smooth.  Then, add the cream cheese and beat in.

Bowl #2:
2 c. all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. nutmeg

Mix all above evenly, and then add about 1/2 c. at a time into egg mixture.  Blend, then add the balance 1/2 c. at a time.

Next, add either 2 c. chopped Hardin Farms pecans or chopped walnuts.
Then, add 2 c grated zucchini (unpeeled).

Bake at 350 degrees about 1 hour for the 2 larger pans or about 35-40 minutes for the smaller loaf pans.

Cool in the pans on a rack for 10-15 min., then turn out onto the rack and cool for about an hour.
Note: I've found these to be good by smearing the 1/2" slices with butter or margarine, put in under the broiler for 60-90 seconds
         and then coated with jelly or preserves.  (Called "gilding the lily"!)
