Portugese Potato and Kale Soup

6 ounces chorizo sausage, bulk

1 T. olive oil

1 large onion, chopped

8 cups chicken broth

8 potatoes, peeled and sliced

6 cloves garlic

1 bunch (one pound) kale, washed, trimmed, thinly sliced

Salt and black pepper to taste


Heat a skillet over medium heat and cook chorizo, stirring, until browned.  Drain chorizo on paper towels and set aside.  Heat the oil in a soup pot over medium heat. Add onion and sauté until softened.  Add broth, potatoes, and garlic. Bring to a boil and simmer, uncovered, until potatoes are tender. 


Transfer the potatoes and garlic to a bowl with a slotted spoon and lightly mash with a fork (or use an immersion blender to blend).  Return to the soup and bring to a simmer. Stir in kale and simmer until kale is tender.  Stir in the chorizo and season with salt and pepper.
