Pork Taco with the Fixins'

Coleslaw #2

1 head green cabbage, shredded

1 bunch baby carrots, grated

½ cup sour cream

¼ cup buttermilk

2 tablespoon sambal oelek

Salt and pepper, to taste

Mix all ingredients together.

Corn Salad

2 cans corn, drained

5 radishes, sliced thin

Juice of two limes

2 jalapenos, seeded and diced

4 tablespoons cilantro, chopped

Salt and pepper

Mix all together.



2 cloves garlic, crushed

2 tablespoons French mustard

2 tablespoons sugar

2 tablspoons salt

1 cup beer

1 lb pork tenderloin, cut in half

2 tablespoons vegetable oil


  1. Mix marinade all together. Allow tenderloin to soak in marinade for 30 minutes.
  2. Preheat oven to 350.
  3. Heat pan on high. Add oil. Add pork.
  4. Allow to cook 4 minutes on each side.
  5. Put in oven to finish for approximately 15 minutes. Check for doneness.
  6. Allow to sit for 8-10 minutes, slice.
