Pesto, Goat Cheese & Sun-dried Tomato Quiche


4 TBS Bittersweet Pesto

1- 9" unbaked pie crust

4 TBS Crumbled Goat Cheese

3 Eggs

1/2 Cup Half and Half

1 TBS All-purpose flour

8 Oil packed sun-dried tomatoes, drained and cut into strips

Salt and Pepper to taste


1. Preheat oven to 400, spread pesto evenly over bottom of pie crust, sprinkle goat cheese to cover pesto

2. In a large bowl, beat together eggs, half and half, and flour.  Season with salt and pepper. 

3. Pour egg mix over goat cheese and pesto in pie crust and arrange sun-dried tomatoes on top.

4. Bake for 30 min or until done.

Cook time: 30 min
