Patty Pan Squash with Fresh Thyme and Ryal's Dairy Garlic Chevre

 

3 patty pan squash, thinly sliced

¼ c  Ryals’s Dairy chevre, plain or garlic, crumbled

Fresh thyme, chopped basil, oregano or dill

2 Tbsp Smith's Creamery butter

Avery Island salt

 

Preheat oven to 350 degrees. Layer patty pan slices at the bottom of a baking dish. Top with crumbled chevre and lightly drizzle with melted butter. Scatter fresh herbs on top and lightly sprinkle with salt. Continue forming these layers until you have used all of your squash, chevre and herbs. Cover the dish and bake it for 30 minutes or until the squash is tender.
