Momofuku Restaurant Ginger Scallion Noodles

Momofuku Restaurant Ginger Scallion Noodles:

 

2 1/2 cups sliced green onions or scallions, green and white parts

1/2 cup minced ginger

1/4 cup grapeseed, canola, or other neutral oil

1 1/2 teaspoons soy sauce

3/4 teaspoon vinegar

3/4 teaspoon salt

 

Combine all ingredients, let sit for 20 minutes.  Mix with vermicelli, or

rice noodles or udon, spaghetti, whatever you have.  Top with more green

onion, and hoisin or sriacha sauce if you have them.
