Mint Summer Salad

  • approximately 1 cup quinoa
  • 1/2 cup grapefruit juice (freshly squeezed is the best)
  • 3 tbsps honey
  • 1/2 tsp lime zest
  • 1/4 tsp salt
  • 1 lb fruit (mixed, strawberries, grapes, melon, whatever fruit you want to use. We like to use berries.)
  • 1/4 cup chopped fresh mint (farm fresh is the best, we have some at farmers market)

  1. Cook the quinoa (we use Pampered Chef's Rice cooker which makes cooking quinoa crazy easy). 
  2. Allow the quinoa time to cool and then mix with the remaining ingredients in with the quinoa. 
  3. That's it! Your done! So simple and so yummy!!!! You're welcome! ;)
