Mint Relish

Mint Relish (adapted from Restaurant Nora)

2 jalapeno peppers, seeded
1/2 “ piece fresh ginger, peeled and sliced
1 small onion, coarsely chopped
10 mint leaves
1 T sugar
1 T lemon juice

Blend or process into a paste.  Serve as a condiment with rice, fish, veggies, etc.
