Mashed Potatoes with Cabbage or Greens

Potatoes, scrubbed and cut into pieces.  I like the skins on for a rustic, earthy dish.

Cabbage or Greens, coarsely chopped. I like large, chunky pieces, less chopping too.

Olive oil, about 1/4 cup

Garlic, 4 cloves

Salt/pepper to taste

In a pot add cold water to cut potatoes, enough to cover by a few inches.  Boil about 8 minutes.  Add Cabbage or Greens and cook until tender, another 5 minutes or so.  Drain.  Add a little olive oil to pot and cook galic until fragrent, not even a minute.  Don't burn!  Return potatoes and greens.  Stir and mash until desired consistency, adding olive oil as needed.  Season with salt/pepper.
