Mark & Caren's Chunky Chili

1 lb ground beef

1 lb stew meat or steak chunks

1/3 cup EVOO

1 medium onion chopped

2 garlic cloves chopped

1 green pepper chopped

8 oz can tomato sauce

15 oz water

40 oz can dark kidney beans drained and rinsed

3 cans stewed tomatoes

1 can diced tomatoes

1/3 cup chili powder

1 Tbs ground oregano

2 tsp paprika

1 Tbs cumin

1/2-2 tsp cayenne pepper (start with 1/2 and add to taste)

¼ cup tomato paste to thicken (if needed)  

 

In Dutch oven heat EVOO then add onion, garlic & pepper and sauté until soft. Then add ground beef and stew meat and brown. Add Tomato sauce, water, kidney beans, stewed tomatoes, diced tomatoes and spices. Simmer for 1-2 hours until kidney beans are soft. Add tomato paste to thicken if needed.   Serve with shredded sharp cheddar cheese, chopped onion and sour cream.
