Mache Scrambled Eggs

4 large eggs, whisked

1/2 large red or green sweet pepper, chopped

1 T finely chopped shallot or onion

4-6 grape or cherry tomatoes, cut in half

1/4 cup cheese (goat cheese or shredded cheddar work well)

about 1 cup mache, torn into bite size pieces

Place a medium skillet over medium heat.  Wait a minute, then spray lightly with cooking spray or olive oil.  When oil is warm, add peppers and shallot and cook until tender.  Add tomatoes and continue cooking for about a minute more.  Pour in eggs; season with salt and pepper.  Stir and cook until almost done, but still soft.  Add cheese and stir until melted.  Then add mache and stir until wilted.  Serve immediately.
