Louisiana Leaves

½ bunch mustard greens, washed

½ clove garlic, chopped

3 Tbsp olive oil

2 cups cooked Cajun Grain Rice

½ lb ground pork

¼ onion, chopped small

1 garlic clove, chopped

1 Tbsp Herbes de Provence

¼ cup grated parmesan cheese

Salt and Pepper, to taste


  1. Carefully destem the mustard greens, trying to maintain a large leaf.
  2. In a medium sized pot, on medium heat, sauté garlic in 1 tbsp olive oil till soft. Add greens. Stir and place a lid on for 2 minutes. Remove greens. Open greens up and lay out on a cookie sheet. Sprinkle with salt and pepper. Put in fridge.
  3. In the same pot add 2 tbsp olive oil over medium heat. Add onion and garlic. Saute till soft, add pork. Mix onions and garlic into the pork well. Cook till done add herbes de province, salt, pepper, cooked rice and cheese. Continue cooking until cheese is melted. Remove from heat. And allow to cool to room temp.
  4. Lay mustard greens into a rectangle shape. Over lapping pieces a little. Place a strip, two fingers thick of pork mixture down the middle. Roll pork mixture up in the leaves. Slice in to bite size pieces. Serve at room temp.
