Leek and Asparagus Ragout

4 Leeks, halved lengthwise and cleaned well

1 bunch asparagus, tough ends snapped off

2 Tbsp Honey

2 Tbsp Dark Soy Sauce

4 Tbsp Olive Oil

Salt and Pepper

Directions:

          1. Preheat oven to 400 degrees. Season leeks with salt and pepper. Use 2 Tbsp Olive Oil to grease a cookie sheet pan. Place leeks cut side down. Roast until tender about 15-20 minutes.

          2. Meanwhile, heat a cast iron skillet on high heat. Toss asparagus with remaining oil, salt and pepper. Add to super hot pan, cook for 5 mins. Remove from pan and cut in thirds. Place in a bowl.

          3. When leeks are cooked, cut into pieces the same size as the asparagus.

          4. Add honey and soy sauce. Add salt and pepper to taste.
