Kangkung Pelecing (Balinese Hand-mixed Spinach)

1/2 pound washed spinach

 1 chili

 2 garlic cloves

 1 medium tomato

 1/2 tsp fish paste (or shrimp paste)

 2 lime leaves (or rind of a lime)

 1/2 onion

 2 T oil

 Salt to taste


Steam spinach for less then a minute. Take off heat. Blend everything else except the spinach in a food processor (or mortar and pestle). Saute all spices in the oil over a low flame. Add the spinach and toss. Serve with lime wedges.
