Kale, Watercress & Vidalia Salad

This was my original salad recipe for Christmas brunch. It was a hit and included much of last week's box contents! Below are the ingredients: 

1 bunched Kale, washed and gently massaged
1 bunch Watercress, stems removed
2 Baby Vidalia Onions chopped
2 Satsumas, peeled & separated
2 Candy Beets, peeled & thinly sliced
8oz Goat Cheese
Seeds of 1 Pomegranate
Sprinkled Walnuts 
Garlic Expressions Classic Vinaigrette (can find at Publix)
