Kale Potato Gratin

4 medium potatoes, peeled and cut into 1/8-inch rounds
2 small yellow onions, cut into 1/8-inch rounds
1 bunch kale, washed and stemmed
1 T butter, cut into pieces
1/2 t tarragon (may also use oregano, basil, or rosemary depending on what you prefer for flavor)
salt & pepper to taste
1-1/2 C milk

Steam kale for 8-10 minutes, until tender. Drain and let stand until cool. Press out excess water then coarsely chop. In buttered 2-quart gratin dish, build up layers of potatoes, onions, and kale - beginning and ending with potatoes. Dot each onion layer with butter, tarragon, salt & pepper. When all is layered, pour milk over top. Cover and bake until potatoes are tender and liquid is mostly absorbed, 35-45 minutes at 350 degrees. Broil, if desired, to brown the top.
