KALE:

ABOUT KALE: Strip the stems from the kale by grasping the leaf in one hand and pulling the stem out. Discard the stems (although some people eat them I find them coarse and too fibrous). Kale is an extremely nutritious vegetable and amazingly high in calcium.

Easy Kale
  • 1 bunch kale
  • An onion
  • Garlic clove
  • A handful of raisins
  • A handful of slivered almonds

Chop the greens and steam them for 5 minutes. Meanwhile brown the onion and garlic if desired in a skillet. Add raisins, almonds and a little water and steam for a minute or two.

Another Easy Kale

Follow the above recipe and substitute soy sauce for the raisins and almonds. You can add a can of chick peas if you like.
