Havard Beets

I got this recipe from my nice neighbor and i love it instantly!  quick and easy!
2c boiled beets, cubed
1/3 c sugar
1 tbsp cornstarch
1/4 c vinegar
1/4 c water from beets were cooked in
1/2 tsp salt
2 tbsp butter
1. boil beets first, cool, peel and cube it. set aside
2. combine all the rest of the ingredients in a pot except for butter. stirring till thick and smooth
3. add the cubed beets and cook over low heat for about 20minutes till thickened
    (at this point you can cool it before storing in the refrigerator.  me i add the butter and store it then when i'm ready to serve i just give it a toss to thin it a little)
4. when ready to serve add butter. bring to a quick flash boil for 30seconds
