Ground Beef with Root Veggies

Very simple, hearty and delicious meal.  Serves 3-4 hungry people.

2  Tbsp Butter

1 lb ground beef

1 lb each of carrots, leeks and parsnips, peeled and chopped.

1 small celeriac, peeled and finely chopped.

Salt and pepper to taste.

Melt the butter in a heavy skillet and brown the ground beef 4-5 minutes.

Add the root vegetables and seasonings to taste.

Cover and simmer slowly over low heat for about 1/2 hour.  A woodstove is great for this.
