Grilled Corn

8 ears fresh sweet corn with husks from Rex Farms Orchard or Earth Spring

1/2 cup butter, softened (1 stick)

1 lime

2 tbsp minced fresh cilantro from Dancing Creek

1/2 tsp smoked paprika

1/4 tsp black pepper

 

Heat a charcoal or gas grill to medium high. Grill corn 20 minutes, turning every 5 minutes.

Meanwhile, combine butter, zest from 1/2 the lime, and juice of whole lime. Stir in cilantro, salt, smoked paprika and pepper. 

Peel back the husks and silks from corn and slather with butter. Return to grill for 5 minutes, turning. Serve with more butter!!
