Green Goddess Spread

This is from The Naturally Healthy Gourmet by Margaret Lawson

16 oz firm style tofu
2 cups spinach
1/4 cup canola oil
2 tbbs apple cider vinegar
1/2 tsp Dijon style mustard
1/2 tsp sea salt
1/2 cup scallions, sliced
1/2 cup parsley, chopped

In blender: blend first 6 ingredients until creamy smooth, adding a little water if needed

Stir in scallions and parsley

Taste and adjust seasonings.

This spread will keep in the refridgerator for 3 -4 days. Serve as dip or spread with vegetables or on bread.
