  • 2 C brown rice
  • 1 bunch chard, chopped and steamed or stir-fried
  • 6 oz jar marinated artichokes, drained and liquid saved
  • Chopped red onion
  • 8 oz crumbled feta cheese
  • 8 or more black olives
  • 1/3 bunch parsley
  • 1 Tablespoon lemon juice
  • ½ tsp dried oregano
  • ½ tsp pepper
