Grapefruit Salsa

1 tomato, diced

1 grapefruit, supreme

1/4 cup cilantro, chopped

1 fresh jalapeno, deseeded and chopped

1/2 cup red onion, diced

1 teaspoon salt

1/4 teaspoon black pepper

pinch of cayenne

Directions:

1. To supreme grapefruit, cut top and bottom rind off. Angling your knife, cut from top to bottom in an arc to remove peel and pith. Cut sections out of grapefruit. Reserve all juices expelled while cutting.

2. Mix all ingredients together. Allow to sit for 30 minutes.
